Becoming Healthy

Lately I’ve been trying to do things in my life to make me more healthy. I’ve been drinking less soda and have switched to water and juices. I’ve been eating better, making sure to include plenty of fruit and salads when normally I would have eaten more junk food. I’ve also started to make sure I work out every night, which I wasn’t doing before. I’ve also started taking vitamins, because of my lack of vegetables at dinner time.

It is a lot easier to eat healthier at breakfast and lunch. I can buy healthy things to eat at those meals. My problem is with dinner. Some nights I teach at sylvan and don’t get home until 8:30, which makes cooking a meal that late and close to when I go to bed is undesirable. On nights when I can cook, I don’t. I’m not a cook. At all. While I have tried various recipes, it just isn’t something I like to do. I wish I’d like it. I have a friend who is a chef and I wish I had his passion for cooking. My sister is also an excellent cook, but I don’t think she’d come over every night to cook for me.

I need to find simple, yet healthy, recipes for dinners. Anyone have any ideas or suggestions on where to find some?

    Get those microwavable steam packs from the frozen section. Brown Rice and Broccoli, then you’ll have to cook a chicken breast on the stove. One package of brown rice is enough for 2-3 meals, so maybe cook a couple chicken breasts and have a couple of meals ready.

    Buy large bags of frozen vegetables. Buy large bags of rice and\or pasta. That is about the easiest thing to make. You boil some water, place a steamer in the pot, put the vegetables in, takes like 8 min to steam them. While thats going, you put rice in water, boil it, then let it sit for about 10 – 20 min. Then its done, you can sprinkle on spices or add sauces. Very healthy.

    I go to a few different sites regularly to get recipe ideas. Some of the easiest healthy recipes that come to mind are things I don’t think you will eat but I’ll find some that I think you’d enjoy and put somehting together for you.

    We are trying to do the same thing! One key for us is going to Soulard Market nearly every Saturday to buy fresh fruits and vegetables. Today we got salad stuff, strawberries, mushrooms, broccoli…Is there a place like Soulard Market out near you? I love Soulard! We also get fresh eggs there and there’s a great spice shop that also sells all kinds of teas…

    For nights when you don’t have the time or inclination to cook, I suggest this. Make something on a day when you have the time, something like chili, for example. Make enough so you can have it again in the next day or two when you don’t have time! 0I remember when your uncle Jim was single and living alone that he used to buy a chicken and bake it, then have several meals from it, some baked and hot, some cold on sandwiches, some reheated in barbecue sauce…

    That’s all I can think of for now…happy, healthy eating!

    Another tip – use ground turkey instead of ground beef in some things, or use half turkey and half ground beef. I use ground turkey in chili and it’s great! (I think ground turkey is sort of like tofu…it tastes like whatever you put it with or season it with. LOL) You can buy ground turkey fresh at Schnucks or you can also buy it in frozen 1 lb loafs or rolls (you know, like Jimmy Dean sausage-type packaging.) You can get the frozen kind at Schnucks, too.

    Try iced tea with lemon or mint. There are some interesting teas now like green tea or chai that I really like! Check out the tea section anywhere. I am making a real effort to substitute tea for Schnuck’s Diet Cola. It’s really hard! (Almost as hard as when I quit smoking…)
